TASTING NOTES

 

VINIFICATION

After a long pressing and statis settling of 24 hours, fermentaion occured at 20°C using natural yeasts.

 

MATURATION

A malolactic fermentation was followed by a long maturation on fine lees. Maturation is achieved both in stainless steel and in demi muit of 600 L. After 12 months these are assembled and continue their maturation process together for 6 more months. A slight collage and filtration were necessary to obtain a wine that is clear and remains stable over time. This wine has not been treated with cold in order to preserve aromatic finesse.

 

VINTAGE NOTES

After a rather mild and dry winter, 2022 began with spring frost. Damage was limited. An exceptionally warm spring made the difference in 2022. The rise in temperature in May hits the start of vegetation with Mid-flower observed by the end of May. Summer was hot and dry (vry dry!) and brought us a ripe and perfectly healthy harvest. We harvested our Chablis on 7 September 2022.

 

REGION NOTES

The appellation Chablis is the most important one of the vineyards on Chablis. It is planted on the hillsides on both sides of the river Le Serein, on the famous Kimméridgien underground. This terroir brings freshness and minerality as well as delicacy.

 

Domaine Jean Dauvissat Père & Fils works 22 hectares of vineyard in Chablis across 7 communes with 53 separate parcels across Chablis and Chablis Premier Cru. Fabien took over from his father in 2009, following training in Beaune and Dijon concluding with a Masters on Bordeaux.

The Domaine began with Fabien’s grandfather in La Chapelle-Vaupelteigne, but it was Fabien who took up where his grandfather left off in terms of bottling and labelling rather than selling off in bulk. Fabien’s approach is one of respect for the terroir, working each vineyard and parcel individually to express the differences from one site to another; and one of respect for the environment by restricting interventions wherever possible. Vinification is in temperature controlled stainless steel with the total maturation for the premier crus around two years. A young new Chablis producer to watch.
