TASTING NOTES
APPEARANCE
Purple mulberry tinge.

AROMA
Cassis, tobacco leaf, ironstone, chocolate, cherry, musk.

PALATE
Silky tannin, unctuous juicy satsuma plum, mulberry, bay leaf, and a rolling supple silky texture of all the beautiful character of cabernet sauvignon. Lots of room to move in years to come but sits lightly and balanced.

FOOD MATCHING
Drink with mushroom and truffle risotto and confit duck.

CELLARING POTENTIAL
Drink now or for up to 20 years.

VINIFICATION
It was crushed to 300 litre beeswax (our very own from Cullen vineyard) amphora and fermented with 46 days on skins before pressing into a new flower day puncheon. The wine was aged in oak for 7 months before bottling on fruit day.

VINTAGE NOTES
2022 vintage grew wines of immense perfume and texture. The cooler sea son and low yields ensured that the health of the vines and hence the fruit quality. Exceptionally good for chardonnay, Sauvignon Blanc, and of course Cabernet Sauvignon.
