Tasting Notes
Aroma
Aromatic and finely textured, this Riesling shows lifted notes of jasmine and white flowers, layered over a spectrum of citrus, from fresh lime to grapefruit pith.
Palate
The palate is driven by vibrant, persistent acidity, complemented by hints of melon and a gentle chalky phenolic grip. A touch of residual sweetness rounds the edges, adding approachability without compromising precision. The finish is long, mouthwatering and distinctly mineral, capturing the tension and purity of cool-climate Adelaide Hills Riesling.
Vinification
Sourced exclusively from our Macclesfield vineyard at the cooler southern edge of the Adelaide Hills. Following pressing, the juice was cleanly racked, with the majority undergoing a slow, wild fermentation in stainless steel to preserve purity and aromatic lift. A smaller portion was handled oxidatively and fermented with solids in seasoned French oak, building subtle texture and palate weight.
Maturation
The wine was matured on fine lees for three months prior to bottling in June, resulting in a style that balances clarity with quiet complexity.
