Tasting Notes

Aroma
Bright and fragrant, with aromas of red cherry, raspberry and wild strawberry, layered with rose petal, subtle dried herbs and gentle spice. The carbonic component brings an extra lift of juicy red fruit and enhances the wine’s soft, flowing texture.

Palate
The palate is fresh and elegant, with fine, supple tannins and bright acidity carrying through to a clean, lively finish.

Food matching
Grilled salmon, mushroom risotto, duck rillettes or charcuterie.

Vintage notes
2025 was a warm and early vintage across the Canberra District. A dry Spring and warm, even Summer supported clean fruit development and led to an early, compact harvest. The settled conditions allowed flavours to develop fully while retaining balanced acidity and fine tannins. Wines from the season are expressive, generous and immediately appealing, with excellent varietal clarity.

Vinification
Approximately 30% of the fruit underwent carbonic maceration, bringing aromatic lift, vibrant fruit and a supple texture. The balance was fermented traditionally on skins before the components were pressed to stainless steel to complete malolactic fermentation and maturation. The wine was bottled young without oak influence, preserving Pinot Noir’s freshness, perfume and delicate structure.
