Winemakers comments
In 2005 we planted Australias first Grüner Veltliner vineyard at Lark Hill and produced the first wine in 2009. Such has been the phenomenal success of this wine that we have extended our plantings to Dark Horse Vineyard.
Food matching
Shellfish, noodle salads, fish tacos.
Vintage notes
2025 was a warm and early vintage across the Canberra District. A dry Spring led to early flowering, followed by a mild, settled Summer that allowed for clean, even ripening and an early harvest. Disease pressure was low and fruit quality was excellent, with ripe flavours balanced by good natural acidity. Wines from 2025 are expressive, approachable and fruit- forward, reflecting the generosity of the season.
Vinification
The Gruner Veltliner fruit was crushed and pressed to stainless steel for cool fermentation, with the aim of preserving freshness and varietal purity.
Maturation
After several months maturation on lees, the wine was bottled in Spring to capture its vibrancy and lift.
