It was founded by 5 friends with a mutual love of Irish whiskey and steeped in the lore and legend of Ireland. The distillery is located in a narrow glacial valley in the Wicklow mountains, about an hour or so south of Dublin. Glendalough, pronounced glen-de-lock, is Gaelic for the glen of two lakes. County Wicklow, in which the valley is situated, is known as the “Garden of Ireland” and is among the most visited scenic attractions in the country.\u003c\/p\u003e\nThe distillery produces a range of spirits including a series of seasonal gins that reflect the unique mix of botanicals that are foraged during each of the four seasons. The Double Barrel has sucked the marrow out of two casks, Bourbon and Oloroso. They each bring their own unique flavour and character. While the Bourbon barrels add, among other things, sweet, smooth vanilla notes, the Oloroso casks layer on those dried fruit and slightly nutty flavours. And of course these are all accented by almost four years resting in Ireland’s mild maritime climate.
