TASTING NOTES
APPEARANCE
Bright pale lemon color.
AROMA
The nose is expressive combining stone fruits like peach, and citrus - lemon and lime. The floral character, mainly of white blossoms, offers finesse to the aromatic profile, while the subtle savory notes from the lees aging add depth and complexity.
PALATE
The mouth is rich and layered, beautifully balanced, with a fresh sensation, an inviting salinity and a vibrant acidity. Long, persistent finish leaving a refreshing, delicate aftertaste.
REGION NOTES
From grapes grown on carefully selected vine parcels spread over areas of the island of Santorini.
VINIFICATION
Rigorous grape sorting by hand on conveyor belt. Whole bunch gentle yet long pressing. Vinification in stainless steel tank under controlled temperatures. At least 4-month lees aging and periodical stirring (bâtonnage) in the tank.
