Dal Zotto Col Fondo Prosecco 2022 11.3% 750ml
Tasting Notes
Palate
This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.
Winemakers comments
This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. The Dal Zotto family lives and works by the credo of family, tradition and innovation and with a third generation becoming involved in the vineyard, cellar door, kitchen garden and events, it seems there is plenty more family, tradition and innovation to come.
Vinification
Col Fondo Prosecco undergoes secondary fermentation in bottle and isn’t disgorged. The flavoursome leesy sediment dances on the bottom, hence ‘col fondo’, literally meaning ‘from the bottom’.

Jeni Port, Halliday Wine Companion - 95 Pts
As the label notes, this is made in the "traditional style of Italian farmers". In other words, expect an authentic, old-school style of sparkling with the second fermentation in the bottle and left undisgorged. Cloudy in colour and gentle in the prettiest scents of spring blossom and florals with citrus, green apple and pear. Flavour intensity and savouriness are dialled up on the palate with additional baked quince, citrus peel, preserved lemon and an almond kernel nuttiness tied to a soft, textural mouthfeel. Expands the prosecco repertoire with dazzling results.
