NOSE

Light, fresh and fruity, vanilla-apricot pastry, lovely young barley, pear compote with star anise and cinnamon stick, bitten candied apple from the fair, naturally with green peel under the sugar glaze, pleasant floral undertones reminiscent of geraniums, subtle toasted wood in the background, green pepper

TASTE

Sugary and peppery at the same time, many spices and herbs under a sweet veneer, reminiscent of mukhwas – the after-dinner digestive aid or "breath freshener" from Indian restaurants. Anise, fennel seed, allspice, cloves, a touch of eucalyptus, sweetened, honey, candied green apple and cinnamon-simmered pears, green pepper, tarragon, young, vibrant barley, slightly grassy, hay, almonds and toasted mild oak with a hint of vanilla.

FINISH

Short, pear, honey, nutmeg, anise, a touch of cinnamon, green apple, young, clean barley, a green peppercorn stubbornly clings to the baking time, slightly grassy, blanched almonds, ending with the whispered sweetness of powdered sugar and vanilla on toasted, dry oak.
