VINTAGE NOTES
Classic, ideal growing conditions delivered an outstanding, highly balanced vintage. A wet winter provided excellent soil moisture, giving way to a moderate spring and a warm, consistently dry summer. True to the region, cooling afternoon sea breezes supported an extended, even ripening period.
VINIFICATION
Machine harvesting during the cool of the night in order to maintain optimal fruit integrity. The grapes are destemmed, crushed and pressed under cool gentle conditions. The juice is fermented at 12-13 degrees to preserve its freshness. Post primary ferment the wine is blended and prepared for bottling as quickly as possible to retain its fresh fruit characters.
