PALATE
The palate is soft and considered, this moves slowly with a lovely texture backed by mouth-watering soft acidity. The fruit drives very clean and long, with stone fruits and a slate like steeliness. This wine is already offering great sheer drinking pleasure, it shows the great restrain and power that the best examples of Eden Valley Riesling can possess. This will age effortlessly and will drink well at all stages of its evolution.

AROMA
The bouquet is very lifted and zesty, a high aromatic profile of sliced apple, mint, pear, lychee, lemon and sherbet.

VINIFICATION
The fruit was hand-picked. No acid added, amazing natural acidity and low pH. The fruit was crushed and the free run was taken with the pressing going elsewhere. The juice was cold settled before inoculation – no lees. Cool and slow fermentation period where it was closely monitored. Wine was fined and filtered before bottling. Matured for 3 months in stainless steel. The wine was bottled in July, fresh & bright.
