Swinging Bridge 006 Tempinot Red Blend 2022 13.6% 750ml
The Batches are bought in separately and treated as individual parcels until blending just before bottling. The Tempranillo is picked as ripe as possible to avoid green tannins. They are both brought into the winery and destemmed and fermented in open fermenters. Both are plunged daily and fermented on skins till near dryness where they are pressed off. At the conclusion of ferment they are transferred to French Oak. The Pinot Noir portion for the TemPinot comes from older oak while the Tempranillo only uses old oak to not dominate.
