Sullivans Cove French Oak Single Tawny Cask Tasmanian single malt whisky has become a legend in its own right, one of the most sought after whiskies in the world, and the bottle that put the Australian whisky industry on the map after winning World’s Best Single Malt at the World Whiskies Awards in 2014.

Aged in 300L French oak casks previously used to mature Australian tawny port-style fortified wine, this whisky has rich flavours of Christmas spice, chocolate, dried fruit and complex oak. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.

Sullivans Cove French Oak Single Cask TD0226 47.4% 700ml

Aged for thirteen years in a 300 litre, French oak ex-Tawny cask, TD0216 is a classic example of the Sullivans Cove French oak ex-Tawny style. Bottled unflocked and unfiltered at 47.6% abv this cask produced a mere 293 bottles.

Tasting Notes:

Nose

This smells like an old Aussie French Oak Tawny cask! Gingerbread, walnuts and pistachios. Grain: Weet-bix, dry barley, dusty sweet earthiness… Popcorn. The grains lead into burnt butter, which then turns to a lovely tropical character of paw paw. There's baking apricots, prunes, glacé cherries and white pepper.

 

Palate

Silky texture and a lot of yummy juicy fruits. Mandarin, peaches and cranberries all culminate in the glorious childhood memory of fruit rollups. Prunes and a lot of cocoa further develop into white chocolate, macadamia and glazed pastry. Structurally excellent and typically French Oak: a tight, yet gentle and balanced grip.

 

Finish

The pastry theme of the palate transitions into buttery shortbread, and the cocoa comes back around in spades. We have the fruit bursts again (peaches, limoncello), and then a sultry earthy finish: roasted tomatoes, a touch of tobacco and eucalyptus.
