Personalised Catalina Sounds Sound of White Barrel Fermented Sauvignon Blanc 2020 13.5% 750ml
Tasting Notes
Aroma
Integrated aromatics of black current, kaffir lime leaf, guava and subtle spices from older oak.
Palate
Excellent fruit weight, fleshy texture and an element of restraint. The intention is to capture the essence of the variety, with layers of complexity and excellent mouthfeel.
Vinification
Hand-picked fruit was whole-cluster pressed to tank, with only a small amount of sulphur added to protect from oxidation. The juice was left to lightly settle for 24 hours before transferring cloudy juice to older, 500 L, French Oak puncheons for a completely ‘wild’ fermentation with the yeasts naturally occurring in the vineyard and winery. After fermentation the wines are topped and left to mature on their lees for 11 months, without SO2 and partial malolactic was completed. This gives the wine added complexity and texture. The wine was bottled in March 2021, prior to harvest.
Vintage Notes
The 2019/2020 season will be one to remember for many reasons. Spring started out with mixed weather – cool temperatures, strong north-west winds, rain and a healthy dose of sunshine which became settled warm weather through flowering in December, ensuring a modest fruit set. Late January into February was hotter than average and very dry, then eased into classic Marlborough warm days and cool nights – retaining the fresh and vibrant acidity and concentration in flavour.
