TASTING NOTES
The sun-drenched limestone terroir lends this wine notes of ripe fruit (white peach, juicy pear) and minerality. The palate is rich and balanced, starting off with finesse and finishing with lovely length and pronounced salinity due to this wine’s minerality.
VINIFICATION
Long, gentle pressing (approximately 3.5 hours) with separation of the juice and separate vinification. The must is racked after 48 hours of cold stabilisation (8°C). The addition of neutral yeast does not add artificial flavour but enhances those that are naturally present in the grapes. Fermented in 20-hl temperature-controlled (15-18°C) casks (supplied by Stockinger) for 3 weeks. Aged for one year on fine lees with stirring if needed. The wines are racked and blended the following spring. Bentonite fined (natural clay). Cellulose filtered and bottled after CO2 adjustment.
