Tasting Notes

Palate
Mountadam Vineyards Eden Valley range is an expression of the purity of cool climate varietals from Estate plantings. Eden Valley Cabernet is greatly underrated showing lovely florals of violets, dark brambly fruits and fine supple tannins.

Vinification
Harvested from Block 38 on 8th of April and the Western Cabernet on the 2nd of April. The fruit was harvested in the cool of the night and harvested using a selective destemming harvester and fermented in 5 tonne and 10 tonne open fermenters after cold soaking for 2 days prior to fermentation. The wine was then matured in 50% new tight grain French oak barriques and 50% 1-2-year-old tight grain French oak barriques.
