VINTAGE NOTES

The vineyards of Saint Aubin consist of two areas of approximately equal size situated roughly at right anglesto each other. One area occupies chalky limestone soils and is exposed to the south and Southeast. In the other area, soils contain a degree of gravel and clay and enjoy a cooler, more easterly exposure.

VINIFICATION

Grapes are harvested by hand and put in small cases in order not to damage the fruits. Grapes are pressed softly, they ferment in oak barrels produced by our cooperage. 1/3 are new barrels.

MATURATION

Aging usually lasts 15 months on finelies before bottling
