In 2009, Fabien Dauvissat assumed control of the family Domaine. Like his grandfather, Fabien chose to bottle and label their own wines rather than selling off in bulk. With twenty-two hectares of vineyard in Chablis across seven communes and fifty-three separate parcels, Fabien is working towards organic and biodynamic certification, and focused on the expression of the different terroirs. Vinification and maturation is in stainless steel. A new generation Chablis producer to watch.
