Situated on the historic homestead of ‘Merembra', Stone Pine Distillery is the first microdistillery in the Central West utilising solar power and harvested rainwater in the distilling process. The founders, Bev & Ian Glen, are committed to only source the best ingredients from Australian native botanicals and keep processing to a minimum, in order to emphasize the natural flavours.
In the case of their flagship Dry Gin which won a Silver Medal at the International Wine & Spirit Competition in London in 2013, it is pot distilled in small batches, gently infusing a proprietary blend of native and traditional botanicals to create a vibrant, fresh and zingy 'new world' gin.
The native flavours of Pink Finger Lime and Lemon Myrtle add a modern Australian twist to the London Dry style and result in a complex flavour, displaying spicy citrus, herbal and floral notes.
