It is cold-soaked for three days in open fermenters and plunged twice daily once fermentation begins. Towards the end of ferment, the wine is pressed with some residual sugar from the whole berries and transferred to barrels to complete fermentation and malolactic conversion. Sulphur is added at the end of fermentation and the wine is aged in barrel for ten months. The oak profile includes 20% new French oak, primarily puncheons, from a variety of tonneliers. Rainfall was slightly above average, paired with high humidity in early February, prompting proactive disease management through trimming, leaf plucking, and fruit thinning.
