When the grapes started their ripening process in January, the weather miraculously cooled to a very mild ripening season. Gently basket pressed. The Cabernet matured for 15 months in fine-grained Bordeaux coopered barrels (60% new). The Shiraz was barrelled down to 1- 2 year old puncheons, remaining on lees for 6 months. Final percentage of new oak in the blend is 50%.
