The grapes were picked during the cool of night to retain acidity and fruit condition. The fruit was gently pressed to avoid over-extraction of phenolics and to maintain purity. After clarification, fermentation was carried out over eight days at cool temperatures using an aromatic yeast strain. SO₂ was added soon after primary fermentation to preserve freshness and vibrancy.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\" style=\"margin-bottom: 0in;\"\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\" style=\"margin-bottom: 0in;\"\u003e\u003cstrong\u003eVINTAGE NOTES\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\" style=\"margin-bottom: 0in;\"\u003eBudburst began in late September to early October following a wet winter, indicating a later season. The ground retained good moisture for most of the growing season, setting the vines up well for healthy canopy development. Flowering conditions were mostly favourable, resulting in good fruit set and balanced crops. Weather throughout the season was a mix of warm, dry periods and cooler conditions, with some rainfall spread across the growing season. While these conditions were beneficial for establishing vine structure, they also increased the potential risk of disease outbreaks. We managed this by maintaining open canopies, allowing good dappled light and airflow throughout the vines. Veraison progressed evenly through to harvest. The vines ripened well, with very little variation due to the excellent weather conditions. This allowed the vines to function effectively without shutting down during the day due to heat stress. The surrounding environment was also a highlight, with plenty of marri blossom resulting in little to no bird pressure.
