Each vintage is Tempranillo-driven, sourced entirely from our Hill Park vineyard at 900m elevation, with the Pinot Noir components carefully selected based on quality and ripeness each year. The result is a wine that balances the best characteristics of both varietals, offering elegance, complexity, and a unique expression of our terroir. These low temperatures saw a late bud burst leading to some low bud initiation and small bunches across the region. These conditions lead to diligent efforts in our vineyards to open up the fruit zone via extensive leaf plucking, thinning and trimming. Fermentation occurs quickly, before 30% goes through malolactic conversion. The barrels consist of 20% new hogsheads and puncheons from a mixture of French Tonneliers that are well suited to Chardonnay in Orange. Each barrel is stirred every couple of weeks initially and then less frequently until the right texture is achieved, differing for each individual barrel. As a very youthful four-year-old – hard to believe! – it’s quiet, concentrated and releases its considerable charms slowly.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eIt would not like over-chilling. Good line and length is assured thanks to cool climate acidity and fruit is slowly coaxed, building in between layers of almond meal, nougat and grilled cashews. The wine is held in barrel for 10 months and initially stirred every couple of weeks, gradually decreasing frequency over time, until the right texture is achieved across each individual barrel.
